I much prefer option 1 but with only 25-30 users, either configuration will
suffice. Suggest installing Exchange on first partition, RAID 1, and then
moving your databases and transaction logs to second partition RAID 5
partition. Backup will be absolutely necessary to purge your Exchange
transaction logs.
