migrating to exchange server

Hi

Right now, our emails are coming from a webhosting source (VPS) which we
have access to manage email accounts, etc.

I'd like to have an idea how Exchange server works if we are to set one up
in-house.

Can someone point me to some links that I can read about migration from VPS
to Exchange ?
    For example: -Do I still need VPS after Exchange is up and running ?
                          -Why Exchange server has options to Send
Only/Receive Only/Both ? What are the benefits of each ?
