You need to make sure that the user she is sending from has send as /
receive as rights to the mailbox.

Find the second mailbox she wants to send as. Open active directory users
and computers, select view / advanced features. Get the properties of the
associated account in active directory users and computers. On the exchange
advanced tab / mailbox rights. Ensure that the account that she is logging
in as has rights, both send as and receive as explicit allow.

Then, have her log out of her mailbox and log back in. Add the account to
the from field that you made the permissions change to, and attempt the
send.
