Hi Samantha,
Exchange service packs are not generally speaking "rollback friendly". Be
sure and back up the server, particularly the information store. It might
not hurt to make a system state backup of a DC as well. In order to
rollback I suspect you would have to rebuild the server, service pack to
SP2, and restore the information store.
Are you aware that there is a Post SP3 rollup out as well? It's "almost"
SP4.
