Remove all the mailboxes, delete all the stores, make sure all public
folders have been deleted and then run setup.exe and uninstall.

which will fix you up.
As for all the stuff in the Schema, it has to stay there. You cannot
remove the extensions.

Dumb question .... the box we're using will also be taken out of
service... what if I just shut it down and remove it? Would that work
just as well?
