This is really not the correct forum for this question.. You should be asking this in an exchange forum. However...
Your simplified explanation is correct. Depending on the speed of your backup/restore, that could cause significant downtime. Be certain you understand how to properly backup and restore complete exchange storage groups and logs, otherwise it could be the beginning of a very bad day.
Or you can migrate a mailbox at a time to another exchange server with larger disks, or to a SAN, which is a good choice for mailbox stores.
You can migrate as slowly as you wish, from 1 mailbox to any number at a time using the Exchange Migration Wizard. The tool queues all of the selected mailboxes and migrates a few in parallel until all are complete. Migrations can also be scripted using MailMig.exe. In my experience it's safe and smooth, but both methods require some research and practice.
Lots of logs are generated during the migration, so keep an eye on your log space.

I need to upgrade my Exchange 2000 server storage. I've got a Compaq
DL380 with the data (Mailboxes) drive a RAID 5 array for 4 mailbox
stores.
To add space, I can (overly simplified):
- Backup data
- Swap in larger drives
- Restore data
We are looking to install a SAN (EMC Clariion Cx3) for 2008 which will
provide storage for a few servers running mostly single purpose
applications.
My questions are?
- Can I use the SAN to store mailbox stores?
- If so, can I migrate slowly, 1 at a time over time? I'm
thinking this
would minimize downtime to just the "down" mailbox store during
the
migration. This would also pull storage pressure off the current
Exchange server and I wouldn't have to upgrade the hard drives.
Forgive my igrnorance on this. I haven't upgraded Exchange after it's
install several years ago. Add in the SAN options and it's a bit
complicated.
