I went to the postfix site and it appears that it doesn't run on a
Windows platform? In any event, since you suggest I can do what I need
to do with postfix, do you (or anyone else) have some "step-by-step" s
to assist or maybe a link to same somewhere?

When the email arrives, assign a unique identifier to it, make a copy
of the email header, put the unique identifier into the subject (along
with the exisitng subject) and send this copy to a different email

this is a common corporate practice.
Much better mta than any of the groupware servers (exchange, lotus or
groupwise).
