Does that person have permission to "Send As" the group? That's a
whole 'nother story!

You hide the membership of the group. You'll find the checkbox on the
"Exchange Advanced" tab of the group.

IIRC, you only have to do that on you "All Users" group to effectively
hide what lies beneath it. Hiding the membership on the other groups
is up to you.
