Use Exchange System Manager
Navigate and hightlight the SERVERS object in the left pane.
You will see all the servers listed in the right pane. Expand the
columns. Any applied service pack will plainly state blah blah, build
blah, Service Pack 1 (since 2 isn't due out for a while)
If it doesn't say Service Pack 1 then it isn't applied.
