Have you gone through the performance troubleshooting guide for
Exchange yet? There are quite a few PerfMon counters to be examined
before you'll be able to start looking for solutions.
Counters like the MSExchange IS "RPC Operations/Sec", "RPC
Operations", and the MSExchangeIS Mailbox "Send Queue Size" might
point out a problem with your servers inability to keep pace with the
workload. Those counter, by themselves, won;t tell you *why* this
might be, but it at least tells you where the problem lies. With that,
you'll have something to measure any changes you make.
Just out of curiosity, what parts of the server are on the SAN? Do you
boot from the SAN? Run from the SAN? Where's the pagefile?
