Regarding your point one below - after /disasterrecovery, databases are not mounted automatically after reboot. This is safety feature so Service Packs can be applied with /disasterrecovery switch as well. After databases are restored from backup system make sure 'Do not mount this store at startup' box is unticked at ESM-Mailbox store- Database tab. If this is not the case is there any error message pertaining to database mount in app log?
