Add add'l Exchange server

Have searched both the Exch 2000 and Exch 2003 newsgroups
for hours and haven't found all of the info I need. Here
is what I need to accomplish:
The owner of our company wants to have his own Exchange
server for two main reasons:
1 - he does not want anyone besides himself and his wife
to have access to their emails (they use the same account)
2 - he wants he and his wife to be able to share Calendar
and Contacts on separate computers
They connect from outside our network. We do have a VPN
set up that they could use. Right now they use
POP/SMTP. Would using IMAP allow for desired result #2
above?
I don't think there is a solution for #1 because there
will always be two people (Sys Admin and me, Network
Admin) who will have Enterprise Admin access through
Active Directory. We could change the permissions on
their mailbox either through AD or through Exchange
System Manager if we really wanted to (which, for obvious
reasons, we don't).
So, I guess my general question[s] are:
1 - is there a way to accomplish what the owner wants
without having to add another Exchange server to our
domain, or to a new domain we create just for him?
2 - if adding a new Exchange server and setting the
permissions on that server so that only he has access,
would I have to create a separate domain for them or
could it be accomplished by adding the server to our
current domain?
Oh man, I know that's asking a lot but I'm really stuck
in a hard place here. The owner has put me on the spot
because I obviously do not want to answer "No, it can't
be done." My answer was "I'm sure there's a way to
accomplish that, I just don't know how right offhand."
Surely someone out there has run into this exact same
problem before.
