I assume there is a reason you cannot use even NT Backup to do an Exchange
aware backup to flush committed log files. The best way of doing this will
be to dismount all stores. Once all stores are stopped (and you can do this
also by stopping the information store service), use eseutil /mh to check
the state of all the stores. They should read either consistant or "clean
shutdown" depending on the service pack level.

Exact syntax

"<drive letter>:\program files\exchsrvr\bin\eseutil" /mh "<drive
letter>:\Path location\databasename.edb

Do this for each on of the databases.

Copy all .log files to a drive anywhere that you can to ensure you have a
backup. Do Not leave out this step or if you have problems you may not be
able to recover.

Once all log files are copied and all databases report clean shutdown. You
can delete the log files.

But understand this is strongly not recommended and NT backup will backup
the Information Store and flush log files. NT Backup would be the preferred
method.
