Right click over her account in Active Directory Users and Computers and
select Rename, that should take care of it.
She will then have two SMTP addresses her old one and a new one, the old one
will be her secondary SMTP address so she can continue to receive mail
addresses to it, and the new one will be her primary SMTP address.
