Offline backups?

Once the new server arrives, I will be migrating my old Exchange 5.5
server to Exchange 2003. I've got a list of white papers and other
info from my technet subscription that I'll be going through for
details, and I just purchased a nice high powered desktop with quite a
bit of RAM so I can do some virtual machine testing of the process to
see what gotchas might trip me up.

I'm wondering, though, if there is any facility to do offline backups
like there was in Exchange 5.5? One of the things I liked the most
about 5.5 was the way I could shut down exchange when I was doing
major server work, do an offline backup, and if everything went bad, I
could always rebuild my exchange server from scratch in about half an
hour by doing a clean install of the OS, naming everything the same,
installing exchange the same way it had been previously installed,
then just copying the offline backup files back to the server.

Is there a similar process for exchange 2000 and exchange 2003?
I recall hearing people talking about the database differences, and I
thought I had heard someone post a while ago that the way of doing
this with 5.5 doesn't work anymore with the later versions. Is there
anything similar though?
