You can use ldp to find any mail-enabled users:
http://support.microsoft.com/default.aspx?scid=kb;en-us;279220
If that doesn't help you can use this to remove the server from active
directory: http://support.microsoft.com/default.aspx?scid=kb;en-us;278918
