Hi,

You won't be able to install a secondary exchange server under a new
organization name. You can only host one exchange organization in one active
directory forest.

Why don't you install the new server with the same name as the original
server?

Doing this means that you won't have to redirect Outlook clients.
You won't have to delete and recreate exchange attributes for the user
accounts.
And when you have recovered the old mailboxes you just import these into the
new mailboxes using exmerge.
