Hi,
You can and should run adprep /forestprep on the windows 2000 domain
controller that holds the schema master role and adprep /domainprep on the
domain controller that holds the infrastructure master role. After running
these commands the schema is running the windows 2003 version but I don't
know whether this would be called running windows 2003 ad (I wouldn't call
it that myself).
After running these commands you can either run dcpromo on a windows 2003
server or upgrade one of the existing 2000 servers to 2003.
