Windows SMTP servers or Exchange?
Conceptually, inbound servers are determined by MX records and their targets - you can point these to the appropriate Exchange/Windows SMTP servers. If existing non-Exchange servers serve as MX targets, you can point them to those Exchange/Windows SMTP servers to deliver inbound mail. Any non-Exchange SMTP servers handling inbound mail need to be added to the internal SMTP servers list in Global Settings | Message Delivery | Properties to ensure stuff like Connection Filtering and Sender ID works.
For outbound mail, if using Exchange server(s) - make these Bridgeheads on SMTP Connector(s) for address space *. If non-Exchange (Windows Server or other SMTP servers), add them as smarthosts on SMTP Connector for *.

I am trying to setup an inbound SMTP server and an outbound SMTP server. But haven't found any documentation on how to configure each.
