Yet I've seen posts in this newsgroup from people requesting help for configuration issues with Exchange 2007 on a Longhorn box, so they have clearly installed Exchange 2007 without any immediate installation issues.
Are there any reasons why I can't?
You have to slipstream the Exchange 2007 SP1 beta into the RTM. You
can then install Exchange onto Windows Server 2008.
