Moving from Imail to Exchange...

I am currently using Ipswitch's Imail Server & am moving to Exchange 2003.
I have about 85 users, so I'm planning for this to take a couple of days to
get in place & am looking for some advice.
Can I have my DNS records (either internal or at Network Solutions) set up
to send mail to 2 mail servers?
Any other advice on making this transition as smooth as possible would be
appreciated!
