Exchange would do you fine. Go with Enterprise because Standard may not
have the storage capacity for it.
Go with 2007 standard because you get 5 unlimited stores. Leave an
upgrade to Enterprise until the 3 year point or at a point you need
it. Factor it into the next budget.
ISA is not required, but it's an awsome firewall product and will make
publishing Exchange and web sites, and setting Internet access rules
incredibly easy.
