Steve,
I did E2K7 MBX, CAS, HTS on VMware ESX 3.0.1.
100 users.
Intel 5160 CPU, 1Gbps netcard, allocated 3GB RAM for virtual server.
Works without problem.
Everything is underutilized.
As edge we use another virtualized server (it is not E2K7, but I think E2K7
would have no problem for this role fro 1200 users)

roles. We've got a 3rd party SMTP server, so we may skip the Edge server
altogether, and then no need to virtualize.

We're creating a transition plan to Exchange 2007 (from 2003) and we are
thinking about virtualizing the servers with the CAS and Edge Roles, and
maybe the HTS role(using MS Virtual Server host). The MBS and UMS roles would

Using VMware to virtualise your CAS and Edge roles is going to be
fairly big for those people who can't justify dedicated tin for all
the roles that they want to maintain.
If you do this through authorised vendors you will receive all the
support you need through the VMware channels until Microsoft iron out
their software and support model inconsistencies.
Do it, absolutely do it but be aware of the support restrictions from
Microsoft.
