Hi Rob,
Exchange Server 2007 is only supported in production using the 64-bit
version, and neither Virtual Server nor Virtual PC support 64-bit guest
systems. Our first 64-bit guest support will come with Hypervisor, which is
coming for Longhorn within 180 days of Longhorn's release (note that is
within 180 days, meaning, it could ship the same day as Longhorn, or it
could ship 180 days after Longhorn ships).
At its RTM, Exchange 2007 will not support Longhorn server (nor will it
support Longhorn directory servers, so AD sites with Longhorn directory
servers will need to be isolated from AD sites that include Exchange 2007
servers). Support for Longhorn will arrive in a service pack for Exchange
2007.
In summary, there won't be virtualization support for Exchange 2007 in
production for some time.
With respect to using LCR, there's information on activating the passive
copy of a database at

We are in the early stages of designing our exchange 2007 transition and
have
a few questions that maybe someone could offer some advice on.
We might implement a single copy cluster configuration and understand
that
in order to do this the client access role and hub transport role would
need
to be on separate hardware. We are wondering if possible to use Virtual
Server 2005 R2 for the Client Access and Hub Transport roles and if that
would be a supported configuration?
Another option we thought about is to use LCR and have all the roles on
one
server. The question with this is could we use the "cold standby method
" and
have a exchange server offline and in the case of hardware failure bring
the
database up using the LCR function and database portability feature
