Looking for some information with regards to setting up exchange 2003
from behind a router. Most are saying that there are too many port to
configure - is this true? Should I be using it outside with a
dedicated ip? Is there anyway around this?

I'm not quite sure what you're referring to, but I'll take a whack at it.
Exchange should be on your LAN, protected by a good firewall that blocks
incoming traffic you do not need or want coming into the LAN. It should not
be in a DMZ. If you want remote users to access it, they can use OWA, RPC
over HTTP, and/or a POP/IMAP client (the latter is not generally
recommended).
