ADC won't move mailboxes.

You need to use Exchange Migration Wizard for moving
mailboxes across 2 different organizations. For public
folders, you need to use InterOrg Replication Utility.

I think you need a 2 phases migration:

First, use ADMT and Exchange Migration Wizard to
create the users and mailboxes in the new organization.
This step may span several days, as you said.

Second, modify the MX records to point to the new
organization. Then, use ExMerge to migrate the mails
received during the first migration period. Remember to
set an overlapping time to avoid missing mails. ExMerge
has an option to avoid message duplication.

For email address, you need to setup Recipient Policy at
the new Exchange Organization to match the email
domain for your users' mailboxes.
