Not sure about Documentation for the Windows Side of things. As for
Exchange, Exchange 2000 and Exchange 2003 are very close to each other and
work on similar technology. So they work together pretty seamlessly.
The steps to do the Exchange migration are quite literally run setup
/forestprep, run setup /domainprep, install the new Exchange 2003 server.
I've skipped some steps but those are outlined in the Deployment Tools.
Then the steps for the migration are really simple as in move the mailboxes
and the public folders as described in the Deployment tools.
