Larry,
You would get by fine with your config but if you wanted to increase the I/O rate then mirror two drives for your OS and logs and put the data stores on the RAID % set.
For instance
2 X 18.2 in a mirrored config for the OS And Logs
3 X 72 in a RAID 5 config for the store.
