There is not alot information on the topic on the web.
I would be looking at from the following two high level headings.
User information

Data can be imported directly into Exchange 2003 / Windows. Depending how many users needed I would be looking for way to extract user information from Sendmail and importing to Exchange.
User data
-------------
It needs to be determined how user data is currently stored and what type of data. For example is there email on the server and held in mail clients? Is there calander information?
I'm assuming if you are using Outlook as mail client to the Exchange Server it could connect to Sendmail server. From here data can be copied between the two.
Its important to determine if any data is held on the mail client connecting to the Sendmail server as there may be a utility to migrate the data to Outlook and Exchange server.
