This is different in different situations:
1) If you are installing E2K or E2K3 on an existing exchange org, no need to
specify Org name.
2) If you are installing fresh E2K server and create a new Org, it will ask
for the name during "ForestPrep".
3) If you are installing fresh E2K3 server and create a new Org, it will ask
for the name during the Installation of first Exchange server.
