Okay, after re-reading you posting...
Finding the users is only the first part.
See http://www.infinitec.de/articles/exchange/searchallmailboxes.aspx for a more detailed guide.

Hello,
I have been looking at a way of finding all users via the Activesee http://www.infinitec.de/articles/exchange/getgal.aspx
Directory but is it then possible to retrieve these users' emails or
will I not be able to get access?
Any other ways of indexing exchange for use with a third party app
would also be useful to hear.
What do you want to index? Mailbox contents? Public folders? AD Contacts?
Best regards,
Henning Krause

I am looking into ways of being able to retrieve all users emails so
that they can be stored (and searched) externally.
