If you're satisfied with the performance of the old server, then make sure that the new one matches or exceeds the specifications of the old.
Logs should be on a separate physical disk, not just partition, from the databases to ensure failure recovery.

In my initial research at TechNet, I can't find the definitive paper that tells me how to prepare a new server for exch 03.
I was wondering if there is an article out there, that can recommend the following: (for an exch 03 backend that will have ~250 mailboxes.)
Recommended amount of physical ram (maximum limitations?)
Recommended OS disk architecture (RAID5 or Mirror, etc..for C:)
Recommended LOGS disk/partition architecture (logs on separate partition I know, but RAID5/Mirror/stripe etc . . .on a DAS ok?)
Recommended STORES disk/partition architecture (stores on separate partition I know, but RAID5/Mirror/stripe etc . . .on a DAS ok?)
Recommended OS flavor (standard/enterprise)(32 or 64 bit) (Server 03 or Server 08)
Also, I am wanting to put the logs and stores on a DAS that has (25)146gb sata drives...is that a problem(aside from having enough space)??
Any advice/direction/tips/links very appreciated.
