I'm plannig to move from a Exchange 2003 enviroment to Exchange 2007, I have
2 servers one acting as a front end and another acting as an back end.
I'll install a new server with Exchange 2007, do I have to replace first the
front end server to keep using OWA Outlook Anywhere and Active Sync with
clients on Exchange 2003 and 2007 or may I keep the front end on Exchange
2003 and only move the users to the new server on Exchange 2007?

Always replace the FE with a CAS. That will let you have the /owa
directory for people moved to 2007 and have the 2003 users connect to
/owa as well which will redirect automatically to /exchange when the
user logs on and the CAS works out that the user is still on a 2003
box.
Remove the FE and then move onto migrating mailboxes.
