They are set up to authenticate to the SMTP server, and I couldn't agree with
you more on using entourage or webmail but for now i have to find a way to
make Apple Mail work :(

I recently "Transitioned" to Exchange 2007 on a Windows 2003 serverR2
and everything works fine with the exception of my MAC users using
Apple Mail. I'm using IMAP and they seem to connect just fine during
setup and it also allows them to receive email just fine. The problem
seems to arrive when they attempt to send emails to individuals
outside of our windows domain. I don't have this problem with any of
my Outlook or OWA clients, this is only happening with the Apple Mail
clients. I'm also using ISA 2006 but i don't believe I have any
issues there.
The following are the two messages clients are receiving when
attempting to send email from the Apple Mail client: "The server
"xxx.xxx.xxx.xxx" rejected the address "email@xxxxxxxxxxxxxxxxx". The
other message states: "Sending the message content to the server
failed". Once again thanks in advance.
Make sure the clients are set up to authenticate to the SMTP server. Also,
I'd seriously push to get them on Entourage so they can make better use of
Exchange, and you won't have to worry about this.
