tom is correct about the external DNS setup. You will need to setup MX
records and point those MX records for the domains that you want to host to
the ip address of your firewall for example. The NS records for the
additional domains that you want to host *should* be on your ISP NS,
although it doenst have to it jsut makes troubleshooting easier.

Hosting additional domains once the internet records are in place in now
more of a exchange and AD setup. First thing you will want to do is create
additional recipient policies for these domains, and then adding the users
who you want to be able to recieve email as user@domain1.com (for example) to
the recipinet policy, this will allow the users to recive the emails for the
additional domains, and they will be able to send out email as
user@domain1.com. If you alos want the users to be able to log into OWA as
user@domain1.com this can be accomplished but you will have to add an
additional http VD server in ESM with the additional domain that you are
hosting. Onec this is done ESM will populate IIS with a new VD (virtual
directory) and the last setting that you will have to do is (and this depends
on if the additionl domains that you are hosting are subdomains in AD if they
are then when you creat the accoutns in ADUC you have the option of chosing
what domain the user account is going to be a member of. If the domains are
not in AD then what yo uhave to do is in AD domains and trusts you msut add
the upn suffix for the addtional domains that you are hosting on your
exchagne server. Doing this will let the users log into OWA and outlook (if
users connect via RPC over HTTPS) as user@domain1.com instead of
user@domain.com
