Use a SMTP connector to control how all the mail is sent out to the
internet. And a routing connector (if bandwidth ok) to connect the two sites
together.

The internet headers question can not be solved with Exchange 2000/2003. You
would need some gateway server stripping the information out and then
replacing it as the email passed through the server. This would require
third party solution (if possible at all). This gateway box would be the
smarthost that the smtp connector would forward email to.
