Outlook Clients randomly prompt for user credentials

Various users are randomly prompted for logon credentials when they launch
Outlook 2007. (happened when we were OL 2003 also). We have another exchange
server in the organization used for Unity VM, and always, the prompt defaults
to wanint to login to that server and not the mailbox server. The user can
enter their credentials, and it gives them access.
There doesn't seem to be any rhyme or reason for it, its very random. Has
anyone experienced this before?
