If you really want.. You can.

You can start by opening all the ports as stated in a whitepaper, downloadable from the Microsoft site, that explains all ports that have to be opened between a frontend and a backend Exchange 2003 server. This will involde opening up all SMB related ports (starting with 135/TCP), but a dozen more will follow.
Furthermore, some ports will be dynamically assigned to the clients. You can limit the range of ports this will be though; that would require you to modify each domain controllers registry and reboot them.

Well, all this is in that document. (Search the Exchange site for that.)

Thanks for the response, but Outlook Anywhere I believe will cause more
administrative overhead than just regular connectivity as most of the users
have desktops that will not be going offsite.
Political motives are the main driving factor so I require ports for Outlook
to Exchange with a firewall inbetween.
