Outlook rules aside, to make this easy, what I'd do is set up HR as a
distribution group. Give it the display name you want. Then add jdoe to
the group.
New mail coming in to HR@xxxxxxxx will show the HR group's display name in
the TO field. Not jdoe's, which is what happens when you add an alias
address to someone's mailbox properties. That always displays the main
mailbox display name and makes it hard to determine to whom a msg was
sent.
