employee resigned but e-mail still there !!!!!!!

I have an employee who moved to another company. Although I removed him from
AD after disabling his e-mail account, his old e-mail address still shows
when I type his name in outlook 2003. I know there is a file I need to
delete in order to remove his name from a cached file but I forgot how to do
it. Any idea?
