Timezone trouble

Hi there, all the timezones on our client machines and our server(s) are EST
(EDT) and for some reason when people are sending mail within the
organization sometimes the timestamps are being listed as Pacific time, the
sender's timestamps in their emails are EST but the receiver sees pacific
time.
Does anyone know whats going on?
