I'm not sure about W2K8 but I've used diskperf (from MS) to expand the
volume size once I've added more disc space to the lun.
You can have different size drives but in some cases, the size of the larger
drive is reduced to the size of the smallest drive. However, you could
create a new R5 with the larger drives and attach that to the lun. Of
course, since it's a new R5 you'd lose some drive space from the 3x500 due
to striping. Lot of it depends on the san vendor you're using. I'm only
familiar with EMC (fc4700 and cx500)

Can't your SAN expand the LUN on the fly? I work for a SAN vendor who
has host based software that will do that for you?
And anyway, Windows 2008 will also do that so long as there is space
available for the LUN to do it.
