I was having a rather dim moment yesterday. I now recall that it was
installing Exchange updates that required some additional steps (such as
installing rollup 4 package) due to forefront as opposed to the actual
Windows Updates for the OS.

We've been running Sybari Antigen for ages and never had to do
anything. Since Forefront for Exchanger is just watching email I don't
see how it would interfer with patching. If you're refering to the
file-level AV then that sometimes can interfer with patching, but I
can't recall the last time I've seen a problem with that.
