Adding the "Send As" permission has fixed the problem and cleared up my
confusion. Thank you for your help!

I'll look into clearing the Domain Admins permissions. Not knowing
enough about ADUC, I don't know what the defaults should be...

In ADUC, check advanced features under the View menu.
THen search for the user you will be sending as.
Under the security tab, add the user who gets the SEND AS perms and
check the SEND as Perm and then apply it.

Wait a bit. It can real slow, ( 2 hours?) then test.

am still able to send emails "From: editor@xxxxxxxxxxxxx". Why does it work
for me, but not for others?

Because your account has them assigned elsewhere and they are
inherited?
