Get-MailboxStatistics = stats about number of items in mailbox, mailbox size, last logon, logoff, etc.
Get-LogonStatistics = stats about Store logons
Where are mailbox last logon, client IP address, and other details in Exchange 2007?

The kind of information you're looking for about email address usage, etc. can be found in Message Tracking logs. You would have to use a log parsing and/or reporting tool to get usable informtaion from tracking logs. Some popular reporting tools:

I looking to put together a report that details some information on several
utility SMTP accounts we use in our Exchange 2007 enviroment. These accounts
are used by scanners to email scanned PDFs to users mailbox. I looking to
track items like average message size, how much traffic they use, how often
they are used, etc. Not sure if this is something that Performance Monitor
can do but Management Shell cmdlets like Get-MailboxStatistics and
Get-LogonStatistics don't seem to provide this type of information I need.
Does any one have a way that I can get usage information like this for these
utility accounts?
