I have looked the properties of the message with the queue and it doesn't
tell me a lot of information i.e. organisation/site name etc. It gives me the
size, date received etc and more importantly the recipient, where can i find
the information you have said to look for?

First, can you find the recipient in the AD? Then find the
legacyExchaneDN property value for that object (use LDP or ADSIEDIT).

Can you send message from E2K7 to E2K3 mailboxes?
