Purchasing new Exchange server. How best to transfer data and e-mails??

We have a client who is planning on purchasing a new SBS2003 server to
replace their existing old spec SBS2003 system.

Obviously all of the company e-mail, outlook data etc is stored on the
old server.

What's the easiest and quickest way to transfer all of the exchange
data from the old server to the new server?
