The information you're trying to protect isn't important. The IP
network isn't routable.

If your perimeter security is breached the addresses and names of
machines on the LAN are discoverable in a matter of minutes (or maybe
just seconds), so seeking to hide them really isn't worth the effort
or expense.

I don't use the MS Edge server role, but that may be able to remove
the "Received:" headers from your internal machines. I don't know
about the information in the "Message-ID" header, though.

If it's something you desperately need, you can front-end the Exchange
server with something like a Postfix MTA and remove/rewrite the
headers there.
