EDB databse to STM databse conversion

I'm in the process of moving mailboxes on our Exchange 2003 server
from one information store to another. Basically splitting up the
existing large databases into smaller ones. From what I've read here:
http://support.microsoft.com/kb/329067 when an Exchange mailbox is
moved, all messages are placed in the new store's EDB database. Then,
when a non-MAPI client such as MS Entourage or Outlook Web Access
opens that mailbox, a conversion is done from the MAPI based EDB DB to
the MIME based STM DB. There are numerous reports that if enough of
these users connect at once, it can cripple the Exchange server.
My question is this: Is that conversion a one time deal or is it
perpetual? i.e., if I move Joe the Entourage user's mailbox, does
that conversion occur the first time Joe logs in after the move or
EVERY time Joe logs in after the move? Seems to me that the
intelligent and LOGICAL answer would be that it converts it one time
and that's it.
Entourage is presented as being the major culprit for this, but it
seems like it would extend to any non-outlook client such as Outlook
Web Access. We have well over a thousand users who use OWA
exclusively for checking their mail. If I have to move them all in
small batches to reduce the load on the server I can do that, but I'd
like to know for sure before I start migrating mailboxes in earnest.
