So what can i do on the Exchange side to correct the problem? There must be
some kind of 'tweak' i can do in the powershell to fix this.. *crosses

Looking like plain text message isn't the same as /being/ a plain
text message. Application writer make all kinds of assumptions about
email, like putting a MIME header in the message header but leaving
out any MIME body parts, or not terminating the MIME boundary. E2K3
(and its predecessors) were amazingly lax about accepting junky MIME
messages. E2K7 probably is maore picky about what it does with those
messages.
